Races
Here are the characteristics of each race.
Humans
Jack of All Trades: A basic 20 points in all skills without any training.
Strong Back: Can carry 60 more stones of equipment than other races, though backpack capacity is the same as other races.
Bonus of 2 Hit Point Regeneration.
Elves
Difficult to Track: More difficult to track using the tracking skill.
Permanent Night Sight.
Infused with Magic: Energy Resist maximum is 75%.
Perception: A basic 30 points of detecting hidden skill without any training.
Bonus of 20 Mana.
10 fewer Hit Points.
The only race that can tame and mount cu sidhes.
Gargoyles
Flying: All gargoyles can fly, moving at mounted speed without using a mount. Gargoyles cannot ride other creatures.
Berserk: When gargoyles are hurt, they receive a bonus of 15% Weapon Damage and 3% Spell Damage for each 20% they are hurt. The bonus is treated as an item property and thus does not go over the item cap.
Deadly Aim: A basic 20 points of Throwing skill without any training, and 5% bonus HCI to throwing that goes above the normal HCI cap.
Mystic Insight: A basic 30 points of Mysticism skill without any training, and a bonus of 2 Mana Regeneration.
Master Artisan: A bonus to Imbuing ability.
Race-Specific Equipment
Not all equipment can be used by all races. In general, gargish equipment can only be used by gargoyles, and most everything else can only be used by humans and elves, though some things are usable by elves only. Here are the details:
Usable by All
Most non-gargish jewelry can be used by all races: bracelets, rings, necklaces, and earrings. Talismans and spellbooks can also be used by any race. In addition there are specific weapons that can be used by all races: shepherd's crooks, pickaxes, smith's hammers, sledgehammers, and wands.
Usable by Humans and Elves
This is the broadest category of items. Generally, clothing and equipment that is not labeled as being race-specific can be used by both humans and elves.
Usable by Elves Only
Some equipment, particularly armor and clothing, may be labeled "Elves Only".
Usable by Humans Only
Very few pieces of equipment are human-only.
Usable by Gargoyles Only
This type of equipment is always labeled "Gargoyles Only". This includes gargish jewelry, gargish armor, gargish weapons, gargish shields, and gargish robes. If a pieces of equipment does not say "Gargoyles Only" then it can almost certainly be used by humans and elves. If it does not say "Gargoyles Only" then it probably cannot be used by gargoyles, with some exceptions as listed above.
Equipment Slots
Physical differences such as wings and horns mean that gargoyles have different equipment slots from humans and elves. Here are the available slots:

* Note that normal earrings and necklaces have jewelry properties, while gargish earrings and necklaces have armor properties.
Race Change
Humans can become elves, and elves can become humans, each by doing the respective heritage quest. The human heritage quest begins in Serpent's Hold - talk to Nedrick the Iron Worker. The elven heritage quest begins in the Lycaeum - talk to Darius the Wise.
It is not possible to change to or from a gargoyle.
